I wanted to try different pasta recipes since some time back ...you must have seen my recipe of Spaghetti in spicy curry recipe, same way I thought this time I will make something different which I had not done before :)
Recently, I wanted to try homemade Alfredo recipe, so instead of going for a store bought jar, made an attempt with Alfredo at home and turned out good!!
I was running short on boneless chicken to incorporate , so I made a Veggie version...without chicken and with of Mushrooms and Green Peas.
Those of you who want to try the non-veg version can use Chicken or any other meat of your choice...I think this dish will even taste awesome with Clams/Mussels or Shrimps.
I made this on a lazy Sunday afternoon for lunch and it took hardly 30 mins to fix lunch for me...so may be if someone wants to try it on a working day might as well can go for it!!
I served this along with Black Seedless Grapes, sliced and marinated in spices...which was truly awesome too!!

- 250 gms - Fettuccine
- 10 Mushrooms
- 1/4 Cup Green Peas
- Salt as per taste
- 1 Tbsp Oil
- 3 Tsp Black Pepper Powder
- 3 Tbsp Unsalted Butter
- 2 Tbsp Minced Garlic
- 1 Tbsp Onion Powder
- 3/4 Cup Milk
- 3/4 Cup Cream / Heavy Whipping / Half-n-Half
- 1/4 Cup Shredded Parmesan or can do Mozzarella too or any other of your choice
- 1 Tbsp Parsley Flakes
Method:
- In a pan, add 1 Tbsp butter. When it melts, add chopped veggies with little salt and 1 Tsp Black Pepper Powder.
- Fry them it they are cooked and starts leaving nice aroma. Switch off the gas and keep it aside.
- In a pan add water,add oil and little salt and boil it. When it starts boiling add pasta.
- Cook pasta until done then drain the pasta.
- In a wide pan, add remaining butter, when it melts add garlic minced and onion powder.
- Fry for 1 min.
- Lower the flame and add Milk and Cream.
- Cook it for a bout 1 to 2 mins. Then add salt,black pepper powder.
- Take it off the heat. Add cheese to it. Stir well.
- The cheese will melt as you stir it.
- Now keep it on lowest flame and add pasta and veggies.
- Add salt and parsley flakes. Coat the pasta well with sauce.
- Serve immediately!!
Tips:
- The longer you leave it, the sauce will get cold and solidify so serve it hot and immediately after cooking.
- If you want the pasta to be more saucy then increase the quantity of milk and cream but adjust the spices accordingly.
