Did you know that the month of February is dedicated to baking? If you’ve never tried it before, or you just want an excuse to spend time with your family, go ahead and browse the web for the most delicious cake, cookie, brownie, or bread recipe you can find. Then gather your loved ones and work together to whip up something yummy that everyone will enjoy!

Lemon Crunch Cake
Ingredients you will need:
- 1/2 cup butter or margarine, softened
- 3/4 cup superfne sugar
- 2 eggs, beaten
- finely grated rind 1 lemon
- 1 1/2 cups self-raising flour
- 1/4 cup milk
- Topping: juice 1 lemon, 1/2 cup granulated sugar
Preheat oven to 350 F. Grease a shallow 7×9 in. baking pan. (We used an 8×8 in. pan and it worked just as well. We greased our pan with butter. You may also choose to line your pan with non-stick paper in addition to greasing it.)
In a bowl, beat together butter or margarine and sugar until light and fluffy. Gradually beat in eggs. Stir in lemon rind. Alternate folding in flour and pouring in milk.
Pour mixture into baking pan and level the surface. Bake in the oven for 45-50 minutes until well risen and pale golden.
While the cake is baking, make the topping. In a bowl, mix together lemon juice and sugar. Spoon the topping over the cake while it’s hot.
If you want to form your cake into squares or diamonds, wait to cut into it until it’s completely cooled. Or if you’re like us, impatient to try it and not really caring how pretty your piece looks, feel free to dig right in soon after the topping has started to harden.
