Fasolada (Greek Kidney Bean Soup)

500 gr. kidney bean (dry)

2-3 carrots (slices)

celery (chopped)

1 onion (chopped)

2 Tbs tomato paste

1 beef stock

Salt, Pepper


Soak the beans overnight to water. In a casserole the day after boil the beans with water (covered the beans) until tender (3/4 hour). Add the celery, the carrots, the onion, the stock and the tomato paste until cooked. Seasoning the soup with salt and pepper and serve hot.
