Eggwhite Oatmeal Pancakes

It’s a new year…and I have a new kitchen appliance!

A Ninja Mega Kitchen System 1500!

I immediately unpacked it, found a nice kitchen cabinet to store it in and then…just stared at it. I had NO idea what to make with such an overwhelmingly beautiful appliance (is it possible to love an appliance?)

I’m not a natural chef. A lot of my cooking experiments need to be recreated several times so they aren’t a) bland, b) burnt or c) looking like something that would be featured on a Pinterest FAIL Buzzfeed post.

So, needless to say, I was a little intimidated by my new kitchen wonder.

Even after some Google searching, I still wasn’t totally sure how to use the Ninja, but I ‘created’ a recipe in which I wanted to try out with it.

Eggwhite Oatmeal Pancakes
Makes 3 small pancakes

2/3 cup egg whites
2/3 cup oats
1 TBS unsweetened shredded coconut
1 tsp ground cinnamon
1 tsp vanilla extract
1/2 banana

Add the egg whites, oats, coconut, cinnamon and extract to the blender and turn on either “Dough” or “Blender” option. I had to leave this one for several minutes until it made a batter (totally possible I used the wrong setting for this…remember, don’t judge me, I’m LEARNING).

Add sliced banana to pancake batter on skillet and cook over medium heat until bubbling, then flip.

I served mine with some Kerrygold Irish butter and it was DELISH! It was so delicious, in fact, I ate it all before thinking to take a picture. Cooking WIN!
