Ingredients
200g Greek yogurt
150ml milk
1 tsp baking powder
1 tsp baking soda
50g oats
100g wholemeal flour
1 tbsp sugar
Pinch salt
50g butter
Into a vitamix blender add all the ingredients in, with the yogurt and milk first.
Blend on slow speed then slowly increase the speed to medium high for about 1 minute.
Pour the batter into a jug and use a small ladle.
Grease with a little butter or oil a fry pan, either one that makes mini pancakes or a small shallow fry pan.
Ladle in the batter and cook over medium heat until the sides start to set
Flip the pancake to cook the other side
Serve immediately and enjoy with toppings of your choice.
