Eggless Strawberry Banana Muffins
While searching for the strawberry cookies recipe this past weekend I came across these delicious muffins; and I’m so glad I did and that I made them. They are not too sweet but perfect for a nice healthy breakfast; for days when you may be running a little behind and do not have time to cook.
These muffins are eggless, but I love eggs. I think eggs are great for you, a good source of protein. I watch too much Dr. Oz maybe but I think eggs are great for you. I do understand that some people have allergies or just do not prefer eggs in their diet. I made this recipe because there have been times when I have been out of eggs, and wanted to bake and was clueless of where to begin. So I’m glad I now know how to make a very tasty muffin, without eggs.
Recipe from: Madhuram's Eggless Cooking
Ingredients:
½ cup melted unsalted butter½ cup yogurt1 teaspoon vanilla extract1 cup mashed bananas2 and ¼ cups all purpose flour¾ cup brown sugar1 and ½ teaspoon baking soda½ teaspoon cinnamon½ teaspoon salt1 cup chopped strawberries
Directions:Preheat oven to 350 degrees.Line a 12 cup muffin pan with muffin liners.Melt the butter in the microwave or in a small saucepan. Set aside to let cool down or place in the freezer for about 10 minutes. Cool to room temperature.Stir together the yogurt, mashed bananas, and vanilla in a small bowl. Add the butter to this mixture and mix. In a large bowl mix the flour, brown sugar, baking soda, cinnamon, and salt together. Add in the strawberries. Recipe says to make sure all of the berries are coated in the flour mixture so that the strawberries do not sink to the bottom of the muffins (I learned something new). Add the wet ingredients to the dry ingredients and stir until combined. Fill each muffin cup to the top of the muffin liner with an ice cream scooper.Bake for 25 minutes or until a toothpick inserted comes out clean.Leave the muffins in the pan for about 10 minutes to cool, then you can eat the muffins right away or you can let them cool. Either way they are delicious!Hope you enjoy as much as I did. J
