Ingredients:
4oz Plain Flour
9oz Skimmed Milk
30g Sugar
1 Tsp Baking Powder
Fruit for topping/filling ( I used Banana & Strawberries)
Any other topping ( syrup/sugar)
Oil to fry the pancake
Slice up some fruit for the filling or topping of the pancakes. My kids love berries – so I used fresh banana and Strawberries.
In a blender or Vitamix add the milk, flour, baking powder and salt and blend for about 1 min and pour into a jug.
Heat up a shallow fry pan with a little oil or spray oil over medium heat. Once the pan is hot, ladle in some batter enough to cover the bottom of the pan tilting and swirling around the bottom of the pan.
Allow to cook for until almost set on top. Take a peak by lifting the edge to see if its set
If the pancake is set then flip over and cook the other side.
Once both sides are cooked, place on a plate ready to be served, and repeat with the rest of the batter ( should get about 6 medium size pancakes)
My kids love them with sliced bananas and strawberries, sprinkled with a little sugar and some maple syrup.
Roll up the pancake and enjoy. Eat while warm, or you can make and freeze them if you want to use for a later date or quick breakfast.
