I tried this non alcoholic version because I tempted to do the method of soaking dry fruits in grape juice overnight and make it in morning. I am sure this method will help to plan for instant Christmas cake.

What is plum cake?

Plum cake can be made in different versions in different cuisines. In india we used to make with dry fruits and nuts. It can be soaked or non soaked version. Traditional Christmas fruit cake is made with alcohol. Soaking the dry fruits in rum before Christmas and make the aromatic cake to enjoy the Christmas feast.

Tips

The mistake which I did is , I chopped the nuts as big size. So while cutting the cake I find difficulty to get in perfect slicing. So I suggest to chop nuts as small.

Do not skip to add the spice powders as it will add the aroma to the cake. Atleast you can add the spices whichever is available.

And in place of milk, you can add curd also. If you are adding curd, skip lemon juice.

How to make eggless Christmas fruit cake:

  1. Soak dry fruits in ½ cup of grape juice for 8 hrs or overnight.
  2. To prepare caramel, heat a sauce pan, add 6 tbsp of sugar.
  3. Once it starts caramalizing, swirl and switch off the flame.
  4. To it add ¼ cup of warm water and mix well. Caramel water is ready. Keep aside.
  5. In a mixing bowl, add the dry ingredients maida, baking powder and baking soda.
  6. Add the spice powders cinnamon powder, cardamom powder, clove powder and nutmeg powder.
  7. Now add 2 tbsp of cocoa powder. Mix everything well and keep aside.
  8. Now prepare the wet mixture.
  9. In a mixing bowl, add ½ cup of jaggery, ½ cup of milk and ¼ cup of oil or melted butter.
  10. Whisk well.
  11. To this mixture, add caramel syrup we prepared already and mix.
  12. Now time to add the dry mixture.
  13. Add in shifts and mix using cut fold method.
  14. Make sure there is no lumps.
  15. Add the soaked dry fruits and chopped nuts. Fold everything.
  16. Finally add the lemon zest and lemon juice and mix.
  17. Grease a tin using oil or butter and dust with flour or use butter paper to avoid sticking at the bottom.
  18. Pour the cake batter in the greased tin and gently tap to remove air locks.
  19. Now make ready the cooker.
  20. Add soil or salt in cooker to 1 inch
  21. Place some cup or plate over the sand.do not place the cake tin directly in sand.
  22. Place the cake tray on top of the plate.
  23. Bake in high flame for 5 mins and then in low flame for 40 to 45 mins.
  24. Check with tooth pick or skewer whether the cake is done.
  25. Once done , cover with clean cloth and let it cool naturally.
  26. After it gets cooled, scrap on sides, flip and tap.
  27. Now Christmas plum cake is ready to slice and serve.
