Eggless Almond Coconut Cookies

A new post for all those people who like me, love to much something yummy while they work or
just lazying around....a great snack for kids......Eggless Almond Coconut Cookies!

I am a big fan of coconut cookies. Loved them when I tried long back at Iyengar's Bakery. Wanted to make the cookies like those but since they are just plain coconut cookies thought of adding almond flavor to it too.
Recently I have started using this MTR Badam Drink mix and I am in love it!
I tried my Almond Kulfi with it and they were a hit!

These cookies also turned out a hit and trust me more than anyone I ate half of them...so I had to make another batch for others! :) :)
Kids would love them,no doubt,as these cookies have almond and coconut flavor in it.

Eggless Almond Coconut Cookies

  • If you do not find MTR badam Mix or any other Almond milk mix,try making homemade almond powder.
  • Add a little elaichi powder / cardamom powder to the dough to give extra flavor.
  • Do not knead the dough. This dough will be very soft.
  • Leave sufficient space in between the dough balls for the cookies to grow or they will stick to each other and loose the shape.
  • I used granulated sugar here. I tried making these cookies with powdered sugar too. In both the cases the final outcome is good but granulated sugar cookies gave a nice crunch to them
  • Choice is yours to use powdered or granulated sugar.
  • Bake them as per your oven temperature till done.
