However, if you look closely, you’ll see that most of them use whole eggs, which may not be suitable for babies under one due to an allergy risk. Egg yolks are a better choice for infants, and you can read more about it here. Now if you’re wondering about what you can make with just the yolk, here is an easy and tasty recipe – egg yolk ragi pancakes for babies – a combination of nutrient rich yolks and the super food ragi!
Egg Yolk Ragi Pancakes for Babies
Ingredients:
- 1 egg yolk
- 1/4 cup homemade applesauce
- 1/2 cup dry roasted ragi flour
- 1 tablespoon butter
- Water as required
Method:
1. Add the ragi flour, beaten egg yolk and applesauce in the bowl. Mix well.
2. Add water as required to get a lump free batter. The batter should be of pouring consistency, but not runny. Keep aside for 10 minutes.
3. Melt butter in a frying pan.
4. Add a ladle-full of batter in the center of the pan. Do not spread the batter with a spoon. Let it spread by itself.
5. Cover the pancake and cook on a low flame for a minute or so, till small bubbles appear on the surface of the pancake.
6. Flip the pancake and cook on the other side as well. Take off the flame.
7. Make more pancakes with remaining batter. Serve warm.
These egg yolk ragi pancakes for babies also make delicious finger food for toddlers. For little ones, cut the pancakes into chunky pieces so that they can hold them with their little hands. This recipe does not use baking soda or baking powder and is naturally sweetened using homemade applesauce. It doesn’t get any healthier than this!
