I love egg and I have tried many recipes with it. My all time favorite is the Chicken Omelette. I make Egg Roast more often. This recipe caught my attention because no coconut is used and it is such a rich and creamy kurma.Ingredients:
Eggs - 4 (Hard Boiled)Tomato-3Ginger Garlic Paste- 2 tbspCinnamon- 1 one inch pieceCloves- 2Cardamom-2Chilly Powder- 1 tbspJeera Powder- 2 tspCoriander powder- 1 tspGaram Masala- 1 tbspSalt- as per tasteOil- 3 tbspCashew- 10 nosAlmond- 10 nosKhus Khus- 1 tspBoiling Hot water- 100 mlCream- 3 tbsp

Grind tomatoes to a smooth paste and set aside.Soak cashew, almonds and khus khus in hot water for 2 hours and blend to a smooth paste.Heat oil in a wok.Add oil and add the spices.Add ginger garlic paste and fry well.Add tomato paste and the chilly powder, coriander powder and jeera powder.Let it boil for about 10 minutes till the raw flavor goes.Add salt, nuts paste and cream and mix well.Add the hard boiled eggs and mix well.Put off the flame and serve hot with any of your favorite dish.
