I'm not always an advocate for frozen meals, but sometimes it is the only option when you've had a busy day and there is no time for preparing a fresh, home cooked dinner. My absolute favorite thing to order when I go out for Mexican (aside from the obvious margarita and chips with guacamole) is an enchilada. I usually go for one loaded with veggies, and sometimes I'll opt for chicken too. How great to be able to make them right in my own kitchen and avoid the trouble of getting dressed to go out, waiting for a table, waiting for the food, paying a tip, etc...
