I just know that they are super easy and fuss-free to bake. And they are very very very delicious!!! Most of our friends who have tried these had seconds and someone told me that these are phenomenal!!!
Ok. You can call these honey cashew nut bars if you are an American-influenced person. Or you can call these honey cashew slices if you are an Aussie-influenced person... Either way if you are a nut-loving person, I guarantee that you will like this recipe.
A friend told me that these Honey Cashew Nut Slices are phenomenal!
How and why did I bake these slices? It started when I bought a big packet of cashew nuts and then my son told me that he was craving for peanuts!!!
"Hey, do you know that cashew nuts are more expensive than peanuts?" I said this, hoping that the difference in the price tags in these nuts might help to change my son's mind.
"Nope. I just want peanuts."What??? What should I do if I have a big packet of cashew nuts and also strange kid who prefer to eat peanuts? I baked these honey cashew nut bars / slices!!! LOL!I told my nut-slices-loving friends my story and they were like "This is bizarre!"... Whether you believe my strange peanut-loving-kid-story or not, you have to believe that these nut slices are very delicious!!!
This recipe is mainly modified from one of my favorite recipes, Honey Almond Slice at here. The substitution of almond to cashew in the recipe has made the slices taste multidimensional. Unlike the mostly crispy almond slices, the cashew slices can be crispy, soft and chewy at the same time!!! If you prefer your cashew nuts slices to be more crispy than chewy, you can divide the mixture into two and bake them equally in two 20 cm square pans or two 25 cm x 15 cm pans and bake them longer at the second bake, about 30 mins or longer until deep golden brown.If you prefer your cashew nut slices to be more chewy than crispy, you can bake all in this recipe in one 35 cm x 25 cm and bake them lesser at the second bake, about 25 mins or until set.
Sounds easy? I reckon it sounds yummy too!
I have baked my slices in one large one 35 cm x 25 cm.
And so mine is crispy at the edges and soft at their inside.
Very seriously fragrant, nutty, buttery and addictive!!!
Must bake, try one and you'll know...

In my video, you will see that I'm using a mixture of 85% cashew and 15% macadamia nuts to bake my slices. It's ok if you prefer to use 100% cashew nuts but I'm not sure if you can substitute cashew nuts with other nuts like 100% macadamia nuts, peanuts or etc. Different nuts have different fat and protein composition and I need to fully test the recipe first before I comfortably can say yes to any of your substitution queries! Please understand that I can't agak agak (meaning estimation in Malay language) because I don't want to promise something that might potentially waste your effort and time.

Here's the recipe.
Make one 35 cm x 25 cm or please see my above baking tip.For the base:
200g butter, melted120g light brown sugar
280g plain / all purpose flour
130g finely ground pre-roasted cashew nuts* or I'm using a mixture of 85% cashew (110g) and 15% macademia nuts (20g)
For the nut topping:
200g butter100g honey1/2 tsp salt300g cashew nuts (whole or halves) or I'm using a mixture of 85% cashew (255g) and 15% macademia nuts (45g)
* To prepare the finely round pre-roasted nuts: spread nuts evenly on a baking tray lined with baking paper. Bake in preheated oven at 180°C / 350°F for 7-8 mins or until light golden and fragrant. Set aside to cool completely. Transfer roasted nuts into a food processor. Process the nuts with short pulses until it forms a finely ground mixture. Do not over-process the nuts as it will form a wet nut paste.Preheat oven to 170°C / 335°F. Line the bottom and sides of one 35 x 25 cm slice pan with baking paper, leaving an overhang on two sides for easy removal of slice after baking.
Combine all base ingredients, butter light brown sugar, flour and finely ground nuts in a large mixing bowl. Mix until combined. Spread mixture to form an evenly layer in the prepared pan and bake for 15-17 mins or until it is slightly set and light brown.
While baking the base, prepare the nut topping. Combine butter, honey, salt and nuts in a saucepan. Use a low heat to cook the mixture for about 3 mins until the butter is completely melted. Stir through, making sure that the nuts are well-coated with butter honey mixture. Do not over-cook the mixture.When the base is baked, remove the base from the oven and spread the warm nut topping evenly over the base.
Bake for 25-30 mins or until deep golden brown. Watch closely as the honey topping can burn very quickly within a minute. Allow to cool in the pan until it is completely cooled and set. Do not remove the warm bake from the pan when it is still warm. The warm slices is not completely set and will break apart easily!When it completely cooled, remove from the pan. Slice into squares and serve. Enjoy!
