I love a good brunch. There is something special about that space between breakfast and lunch that allows for good conversations and fun times. Brunch is the chance for a special hearty meal you don't get on a normal day. That being said, if you are the brunch host you can find yourself missing all the fun while you're flipping pancakes and scrambling eggs. I'm a fan of omelet muffins for brunch. They allow everyone to have a customized omelette, and give the host a chance to step away from the stove, or make the other dishes simultaneously. Omelette muffins are very simple.
Ingredients
6 EggsNon-stick cooking spray1 Cup Shredded Cheese
3 Strips of Bacon1 Small Green Pepper1 Small Can HORMEL® MARY KITCHEN® Corned Beef Hash2 Tablespoons of MilkSalt, pepper, garlic salt, and paprika to taste.
These ingredients are entirely negotiable. The number of eggs you use is the number of muffins you will make. For the mix-ins choose whatever omelet toppings your friends and family love and increase the amounts accordingly for the number of people you are serving. With this batch I chose green peppers, bacon, cheese, and HORMEL® MARY KITCHEN® Corned Beef Hash.
The first time I ever had corned beef hash was a complete accident. I sent Hubs to the store for a corned beef and a head of cabbage to make a corned beef and cabbage dinner. I wanted an actual corned beef cut of meat, but he returned home with a can of corned beef hash! While I had to improv dinner that night, the next morning I decided to add the hash to our scrambled eggs, and it was delicious. This is how my love for the combo of eggs and corned beef hash began. It is flavorful and fills you up. HORMEL® MARY KITCHEN® Corned Beef Hash makes a great addition to a special breakfast or brunch.
To prep for your muffins: 1. Pre-heat your oven to 375 degrees2. Whisk your eggs together with your milk and seasonings3. Brown and crumble your bacon4. Chop your green pepper into small pieces5. Brown your corned beef hash6. Spray your muffin tins with non-stick cooking spray
To make it easy for your guests to craft their omelet muffins set your mix-ins up in small bowls next to your muffin tin and allow each person to fill their muffin cup(s) with their preferred items. Once you're mix-ins are in, fill each cup with your egg mixture to just below the rim of the muffin pan.
Bake your muffins for 25 minutes. They will puff up in the oven and deflate just a bit when you take them out. Allow the muffins to cool for about 10 minutes before removing them, and enjoy!
