Early Spring Savoy Cabbage Salad with Lemony Vinaigrette
Another week has started! And as busy as it can be, I'm always trying to find time to connect with the people that I care and love. It fills my soul with joy and at the same time makes me feel most grateful for such amazing people in my life. And although sometimes it seems that I'm running against the clock, I know in my heart that time goes by quickly and there's always time to be made for the important things in life. Like family and friends... laughter and good food.
That's exactly what we did this past weekend. We had lunch with friends and also went for long walks with J. on Saturday. The day was sunny,warm and breezy enough to wear a light jacket!Perfect for long walks! We walked along the marina bay area and I'll share some pictures soon.

Today I spent most of my time cleaning, organizing and re-organizing our home.I was so intertwined with all the things that I was doing at home that by the time it had reached lunch I was craving for something satisfying but light. And I knew just what I wanted! Si! ensalada! Yes! salad!
I took this head of savoy cabbage that I bought last week,radishes,parsley, mint leaves -from the little garden- and some oranges and made a large salad with a lemony dressing. Delightful! Crispy, peppery and sweet with a touch of sour. 
I sat outside with my bowl of salad and finished it all.

Early Spring Salad {Savoy Cabbage+Radishes+Parsley+Mint+Oranges+Chia Seeds} Serves 2  5 C. Savoy Cabbage, finely chopped 2 Medium Radishes, finely sliced 1/2 C. Parsley, chopped 1/2 C. Mint leaves 2 Oranges, finely sliced  Some Chia Seeds or Sesame seeds
Lemony Dressing: Fresh Juice of 1/2 Lemon 1/4 C. Olive oil  1/4 tsp. Garlic powder 1 tsp. Soft brown sugar or honey Sea Salt Ground Peppercorn
Preparation: Combine everything in a bowl.Set aside. In a separate bowl mix all the ingredients for the dressing and pour over the salad. Garnish with chia seeds and serve this crispy salad with slices of toasted bread.
