drumstick soup recipe | murungakkai soup - a miraculous soup recipe loaded with enormous health benefits. Here in Singapore we can expect rain at any time so the most soothing one is soup recipes. So I used to try different varieties of soup. I got a batch of drumsticks and was thinking about what to do as a new blog post, this murungakkai soup hit my search. I have added ginger, garlic, cumin powder(jeera), and pepper powder as ingredients. So it is perfect for digestion , fever, cold and cough.

Drumstick is iron rich, low in calories and low in carb. So the amount of consumption is flexible. If you eat extra also it won't affect you. Drumstick is a fibre rich vegetable so it helps in managing diabetes, heart diseases and cholesterol.

Variations of drumstick soup:

Chicken drumstick soup - we can drumstick soup by adding chicken stock alone or with chicken bones or flesh. It is more nutritious with the combo of chicken and drumstick

Drumstick soup with coconut milk - Its a vegan soup and has rich coconut flavour

Creamy drumstick soup - addition milk or milk cream is the main ingredient to give a richer and creamier texture.

Drumstick lentil soup - we can make it using lentils like moong dal. The outcome of the soup is very native and flavourful.

Use butter:Use butter for sauteeing as it gives wonderful aroma to the soup

Try adding milk :You can add some milk for creamy version

how to prepare drumstick soup

  1. Wash drumstick and chop onto rough pieces.
  2. Chop onion, garlic and ginger roughly.
  3. In a saucepan , add 2 cups of water,chopped drumsticks and 1 tsp of salt. Cook closed until the drumsticks are soft.
  4. Once done, reserve the drumstick stock for soup and cook the drumstick.
  5. Once cooled, scoop off the flesh using a spoon or knife and keep aside.
  6. In the same sauce pan, add butter, once it melts, add ginger garlic, saute for 30 secs, and then add big onion and saute till it turns soft and transparent.
  7. To this add drumstick flesh and saute for 30 secs and turn off the flame.
  8. Cool completely and grind to fine puree.
  9. In the same saucepan we used for sauteing, add pureed drumstick along with drumstick stock.
  10. Let it cook closed for 3 mins. Then add salt, cumin powder, pepper powder, chopped coriander leaves and turn off the flame
  11. Serve hot with bread or croutons.
