Dr Pepper Pulled Pork Gameday Sandwiches
It's that time of year, again. College Football season is upon us. Now, I'm not pretending to be the sport's biggest fan. I admit, I grew up with a serious lack of football (or any sport, for that matter) influence in my life and it isn't something I've ever tried to change... however, being a single lady, it can help if I at least pretend that I care. This might surprise you, but boys seem to really love football... I know, shocking. So if they love it, then I need to learn to love it, and show them what makes me a one of a kind fan.
One aspect of college football season that I can really get on board with is the food. It's hearty, delicious, comfort food. Plus, what better way to win over all these boys, who can probably see right through my false enthusiasm, than with a delicious dish I can serve? My lack of football knowledge will forgotten as soon as they sink their teeth into one of these pulled pork sandwiches. Now, these are no ordinary sandwiches, the pulled pork has been marinated in, you guessed it, Dr Pepper from Target. It is sweet, savory, and has just a bit of a kick. It's a recipe that is sure to win over any college football fan.
Dr Pepper Pulled Pork Gameday Sandwiches
Ingredients
2 lbs Pork Roast
2 cans Dr Pepper
1/4 cup Brown Sugar
1/4 cup Water
1/2 an Onion
1 Garlic Clove
Salt & Pepper
Buns
BBQ Sauce
Directions
Place the pork roast in a plastic bag and add 1 can of Dr Pepper and 1/4 cup brown sugar. Seal the bag and place it in a bowl, in case the bag leaks. Refrigerate the pork overnight to let it really marinade in the Dr Pepper.
When you're ready to cook the pork, stick it in a crock pot/ slow cooker and discard the marinade. Add 1 cup of Dr Pepper, 1/4 cup water, salt & pepper, 1 clove of garlic- minced, and half an onion- chopped. Let it cook on high for 3 hours being sure to flip the roast over halfway through.
Once your pork has cooked all the way through, remove it from the crock pot and place it on a cutting board. Using two forks, shred the pork, finely. Once the pork is completely shredded, place it in a bowl and add about 1 cup of barbecue sauce. Stir until the meat is covered completely. At this point you can either stick it in a saucepan to warm up the barbecue sauce or serve it cold. Place the meat between buns or on top of a salad and enjoy!
