Diwali Mini Biscuits

Here are some Diwali inspired short bread cookies IMG_3877

With a hint of almond, pistachio and spice these little gems are a beauty!

To be completely honest these were suppose to be cookie press Spitz cookies however I could not get them to work! I think it will be my new christmas mission! Make some cookie press Spitz cookies.

Ingredients:
100g Butter
50g Icing sugar
1/2 Tsp Almond flavouring
1/2 Tsp pistachio flavouring
100g Plain flour
50g Corn starch
Pinch of cardamom
Pinch of mixed ground spice

Cream together the butter and sugar and add the flavouring.

Add the flour, cornstarch and spices

Mixed until all combined.

Add the dough to piping bag with star nozzle and pip on to a baking sheet.

They will not rise or spread alot, so you don’t need to leave to space in between. Bake at 180c for 8-10 minutes until slightly browned and allow to cool.

Mix a little icing sugar with red food colouring and place on the center of the biscuit and add a silver ball on top.
