Delicious Topfencreme

Since my grandmother always makes curd cheese or as we call it topfen from scratch in heaps, everyone gets a couple of packages to make dumplings, cremes or cheese cake. It´s also very yummy when you simply put it on top of whole wheat dark bread or a bagel and combine it with avocado, salmon, salt and pepper. Anyhow I figured a new creme recipe, which tastes absolutely delicious and light. In addition to the cream you can layer cookie crumbs and fresh or caramelized fruit in a glass, alternating the cream in between. Mmmh simply love this easy and quick to prepare dessert. As you might have recognized I´m a huge fan to make quick and easy recipes, because sometimes live does´t approve one to spend so much time in the kitchen, all though on the other side I appreciate cooking for hours, when I have enough time, which I will show you in my next post…

This is what you will need:

  • 500g curd cheese (Topfen, Quark)
  • 250g heavy cream
  • 80g sugar
  • zest of 1/2 lemon
  • 1 tbs. lemon juice
  • berries and some extra sugar to caramelize, or simply fresh fruit
  • in addition you can add crumbled cookies as a layer

Combine curd cheese, sugar, lemon zest and juice in a bowl and fix using an electric mixer. In a separate bowl whisk heavy cream until stiff and fold into curd cheese mixture. That´s it now, you can fill the cream into glasses, alternating with one layer of fruit, or cookie crumbles and one layer of creme. Set dessert in fridge to rest for about an hour (where it can be stored up to 3 days). Serve with a couple of berries garnished on top.
