For an added treat for a recent gorgeous little girls birthday party I decided to make some Hello Kitty Sugar Cookies, which I think she loved, specially since you had a few during the party. In hind sight I should have made Minnie Mouse cookies as that was her birthday theme, but these little gems blended in pretty well too.
Sugar cookies is a cookie made from sugar, flour, butter and eggs with baking powder or baking soda flavoured with some sort of extract such as vanilla, rose, almond or even cinnamon. These are a shape cookie meaning that they are rolled and cut or molded into shape. These cookies are usually decorated with frosting, icing and even sprinkles. They are very often made during holidays such as Christmas, Halloween and Easter.
This was a Saturday morning job for me and kids, which was brilliant having 2 little helpers. The kids did most of the rolling and cutting the cookies out.
Cookies are so versatile as you can you cut and decorate as you wish, using what you have in the house and making the cookies are simple or decorated as you like. This batch did make a lot of cookies, but you can refrigerate half the batch for another day if you want to make only a few at a time - but I must warm you they are incredibly more-ish!
I made a few with the chocolate sprinkles and some just plain. I had the kids make some sugar flowers using fondant icing and flower cutters then using water to stick them together and adding a silver ball to make them look pretty and add to the Hello bow.
Ingredients
200g Butter
200g Caster Sugar
1 Tsp Vanilla Extract
1/2 Tsp Almond Extract
1 Egg
400g Flour
2 Tsp Baking Powder
Add soften butter to a mixing bowl chopped into cubes.
Add sugar to the butter and start to cream together.
Add in the egg and vanilla, almond extract and beat on low to medium speed.
Make sure the buttery mixture well mixed and light.
Slowly add the flour and baking powder to the buttery mixture.
Once all the flour has been added it should turn into a dry dough, shape into a ball and roll out
Roll until about 1/3 of cm thick.
You could also add sprinkles to the cookie dough to add flavour or colour.
Using cookie cutters cut out cookies.
Bake in the oven at 170c for about 6 minutes until slightly golden brown.
Make some coloured icing using icing sugar, a drop of food colour and a few drops of water. Mix well and pour into icing bags ready to pipe and have some fun.
Decorate the cookies and allow the icing to dry.
