Thayir sadam is usually consumed at the end of the meal due to its digestive properties. The probiotic in curd aids digestion so this curd rice recipe is considered as a very comforting meal.In tamil nadu due to its hot weather condition, curd rice is prepared a lot due to its cooling property. In all homes, lunch is not over without curd rice.

Choosing and cooking the rice: While choosing the rice for curd rice, do not go for long grain rice. Ponni rice(both parboiled and raw rice), sona masoori rice tastes good for thayir sadam. Also while cooking the rice, if you are using a pressure cooker, add extra water than usual to get the soft cooked rice. If we are using the boiling method, we can cook a little more time than usual.
Quantity and quality of yogurt(thayir) : use good quality yogurt not sour ones(pulicha thayir) and if you are using 2 cups of rice, add 1 cup of thick yogurt.
Milk and butter: to get the creamier consistency do not skip adding butter. Also if we use milk, you can pack the rice for a lunch box without any hesitation. The addition of milk avoids the sourness of rice after some hours. It tastes the same freshness as we prepared in the morning.

Ingredients
Rice – 1 cup
Water – 2 ½ cups( To cook rice)
Curd – 1 cup + as required
Milk – ½ cup
Butter – 1 tbsp
Raw mango – 2 tbsp(Chopped)
Cucumber – 2 tbsp(Chopped)
Carrot – 2 tbsp(grated)
Cashews – 2 tbsp(chopped) (optional)
Coriander leaves – few
Pomegranate seeds – 1 tbsp
Salt – as needed
- To temper:
Oil – 1 tsp
Mustard – ½ tsp
Curry leaves – few
Green chillies – 1 or 2( finely chopped)
Directions
- Wash the rice and pressure cook with 2 ½ cups of water. Let the pressure leave and mash the rice using a ladle.
- Then heat the milk and add the hot milk to rice.Also add the butter now itself, so it melts in the heat. Just give a quick blend and let it cool completely.
- Then add curd and salt to it.Mix well. It will become creamy in texture.
- Now add the chopped raw mango, cucumber,carrot, cashews, pomegranate seeds and coriander leaves. Blend well.
- Then temper with the items given under “to temper”
- Add this seasoning to curd rice and mix well.
