Hey everyone! How was your weekend?  I had a fantastic one as we took a road trip down to a village resort (post coming soon) and spent two whole days swimming, eating mangoes straight from the trees, fishing and just lazing around! It was a much needed respite... But now its back to the grind. Sigh!
Anyways, we here in Kolkata are reeling under a sweltering summer and the last thing one wants to do is to spend hours trapped in the kitchen cooking elaborate meals. Cupkin seems to have read my mind and she sent over this wonderful weeknight meal idea that I thought of sharing with you today.CUPKIN Monday Vol.IV: Easy Chicken and Salad Recipe

Hello there! Excellent and excessive eating during the weekends leaves me unhappy and guilty Monday mornings. So I try to do some diet nautanki! ;)
Today I am making a quick and healthy meal for dinner: Chicken and Salad Cupkin-style!
Things required (For 2 persons): 
For Chicken-1. Chicken 300gms2. Salt to taste 3. Crushed Pepper (1/2 teaspoon)4. Kasuri methi ( a pinch) 5. Chilly flakes6. Ginger garlic paste (1 tablespoon)7. Dash of lemon 8. Butter or Olive oil
For Salad-1. Vegetables :Carrots, broccoli, Corn, Red bell peppers, Yellow bell peppers, ( any other veggie that you feel like) cut in any size you like.2.Oregano3.Chilly flakes 4.Salt5.Any pasta ( optional )
Method:
  1. For the chicken, marinate it with all ingredients (except oil or butter ) for 1-3 hours.
  2. In a hot pan add oil or butter- about 3 tablespoons. I know it's a little extra but it will be dressing for the salad too.
  3. When the oil/butter is slightly hot add the chicken and let it cook for 1 minute on high flame. 
  4. Reduce the flame to low, cover and cook for 15 minutes. Keep flipping sides. Don't add any water.
  5. When you see the chicken is glazed and cooked remove it from the pan.
  6. Voila your chicken is ready!

  1. Now for the salad, in the same oil/butter add all vegetables except the bell peppers.
  2. Cook it without the lid on, add salt, chilly flakes, oregano to taste - I used the Domino's one ;)
  3. Add the bell peppers and any boiled pasta ( it's optional). Mix it well and just cook for a minute or so.
  4. Oh yes! It's ready to eat.

*****Wow! That sure looks nice, simple and tasty! Apart from the marinating, the chicken virtually cooks itself, and you can easily boil the pasta while chopping the vegetables. Easy na?!For people like me who don't eat chicken, this can be made with mushrooms, tofu and/or paneer, or even fresh bhetki/pomfret fish fillets - which will also reduce the cooking time drastically - so no worries there! Fast food that is yummy and healthy as well... Win win!
