Oh avocado toast, you deliciously simple dish. It’s a perfect meal for breakfast, lunch or dinner. The toppings and creations are endless. I mean seriously, have you searched for avocado toast recipes lately, hundreds, if not thousands will pop. And I know another avocado toast, but I made this one on a whim one day for lunch and it was literally heaven, how could it not be when topped with a fried egg. A fried egg with a runny yolk is by far one of my favorite foods to eat. I know something so simple, but I can’t get enough of it. I top soups with it, vegetable sautés but usually just as is with a piece of toast to soak up all the yolk deliciousness. I had an avocado and the remainder of a cucumber that needed to be eaten, and for some reason I just wanted bread. It’s pretty much the most important part of avocado toast. The bread, whether a thick cut of white bread, or seeded whole grain oat or even pumpernickel, it has to be toasted just right. Golden brown enough to handle the moist avocado and toppings, and of course not burnt. Half of the avocado gets spread onto the crisp toast, then layered with sliced avocado, then some more avocado, and thinly sliced cucumber. The pièce de résistance, a perfectly fried egg. One where the edges are crispy and the yolk is just barely cooked. A sprinkling of salt if you prefer, but a couple of drops of Siracha hot sauce is all I need. I hadn’t had much of an appetite for real food after returning from vacation so I thoroughly enjoyed every single bite and crumb of this avocado toast. Just writing this post has me craving it again. Oh, and if you’re hosting an Easter brunch this Sunday, it’s definitely a fun new way to serve up toast and eggs. Have a variety of breads on hand, and have guests top theirs to their liking.
Cucumber Avocado Toast w. a Fried Egg
Ingredients
1 slice – Bread, of choice
1 – Avocado {ripe}
1/4 cup – Cucumber {sliced}
1 large – Egg
Siracha, optional
Recipe
Toast bread until dark golden brown {about 2 minutes}, allow to sit for a few seconds to become firm. In the meantime, heat a small sauté pan with a teaspoon of olive oil, and fry the egg on high heat, until the edges are brown and crispy. If you prefer a fully cooked yolk, cook the egg further.
Mash the avocado slightly. Top the toast with half the mashed avocado, then the sliced cucumbers, and the rest of the avocado. Finish off the fried egg and few drops of siracha hot sauce.
