For this quick 5-ingredient recipe, we will roast oats, sesame and pistachio and add them all to the sugar syrup.

A lot of people get confused with the consistency of sugar syrup, trust me this one is a super easy task as we just need to melt the sugar and do not need to be bothered about the thread consistency at all

So let us see how it is done step by step.

First of all grease a clean flat surface or plate with some ghee to set the chikki/bars. Dry roast half-cup sesame seeds on medium heat for 2 to 3 minutes in a thick pan/kadai. Transfer the roasted sesame seeds into a bowl.

In the same pan / kadai, add 1 tablespoon of ghee and roast half a cup of oats for 3 to 4 minutes. Remove from the kadai and add it in a bowl.

Now we will make the sugar syrup. To make the syrup add 1 tablespoon of ghee to the kadai on medium heat and add one cup sugar. Keep stirring, the sugar will slowly start melting. Once the sugar is melted completely, the syrup is ready. Switch off the flame, as we do not want to heat the syrup further.

One needs to do this step a bit quickly else the chikki can set in the kadai/pan. At the same time do take care, as the mixture will be very hot. Thickness of the chikki/bar can be around 8 to 10 mm based on personal preference.

Make cuts using a sharp knife / pizza cutter (in any desired shape).

Variations:

  • You can grind the roasted oats and sesame to a fine powder and then add it to the syrup for a different texture.
  • Cardamom powder or Vanilla essence can be added for enhancing the recipe.
  • You can also add roasted peanuts / combination of almonds, cashew nuts, walnuts etc. instead of sesame to make a multi-fruit bar. I have tried the same recipe with peanuts too and it tastes just wonderful.Try this homemade peanut chikki recipe too.
  • Try to give only 1 to 1.5 of these sesame candy bars a day for kids as more than that may be heavy for young stomachs.
