I know that these crispy cornflakes cookies are awesome because they are baked with one of my favorite butter cookie base recipes. Prior this bake, I had thoroughly tried and tasted this recipe and already knew that this recipe is going to be awesome.
However, I had been baking a lot for our Chinese New Year celebration lately and thought that I should bake half of the following recipe just to illustrate the super easy baking process of these cookies in my video. And I hope that you will like and appreciate this recipe and also the video.

Here's the recipe.

Makes about 16 cookies
100g unsalted butter, softened at room temperature
30g icing sugar, sifted
1/2 tsp vanilla paste or extract
60g all purpose / plain flour
40g cornflour
1/4 tsp baking powder
1/2 tsp salt
50g cornflakes
Preheat the oven to 160°C / 320°F.
Line baking trays with baking papers.
Using a wooden spoon or an electric mixer with paddle attachment, beat butter and sugar until combined and creamy.
Add vanilla. Sift flour, cornflour, baking powder and salt into the butter mixture. Use a spoon or spatula to mix until combined. Add cornflakes and mix well to incorporate. Do not over-mix the dough. And do not crush the cornflakes.
Scoop or roll about 1 tablespoonful of dough onto the prepared baking sheets, about 5 cm / 2 inches apart. Use the back of a metal spoon to flatten the cookie dough slightly.
Bake for 17-18 mins or until the edges of the cookies are firm and golden brown. If you are baking two trays at one go, swap and rotate the position of the tray halfway through the baking so that that the cookies are baked evenly.
Allow cookies to cool slightly on the tray for about 10-15 mins, then transfer to racks to cool completely. Cookies will become crispy when they are completely cooled.
Serve and enjoy the crisp and crunch. Store any uneaten cookies in an airtight container at room temperature for up 2 weeks
