Warm, soft, chewy cookies are so irresistible and moorish! Why can't I just have one - instead of 3! I should just grab this heavenly cookies and rub them into my thighs...as that is where they will end up! lol.
I usually make a Oat Raisin Cookie, but I decided to mix it up a little with adding cranberries and white chocolate instead.
Still keeping them slightly spiced with the cinnamon, they are such a naughty but nice treat!
These are completely nut free, so great school lunch box treats.
Ingredients
135g Butter
80g Dark Brown Sugar
80g Caster Sugar
1 Egg
1/2 Tsp Vanilla
190g Plain Flour
1/2 Tsp Salt
1/2 Tsp Baking Soda
1/4 Tsp Cinnamon
60g Oats
100g Cranberries
100g White Chocolate
In a mixing bowl, add butter and sugars and cream together.
Add egg and vanilla and re mix the for a further 30 seconds.
Then add flour, oats, cinnamon, salt and baking soda.
Mix on medium speed for about 1 minute.
Chop or break the white chocolate into small pieces and add to the mixing bowl with the cranberries.
Fold in the white chocolate and cranberries into the cookie dough.
Using a small scoop, add 12 small scoops of cookie dough to a large greased baking tray, make sure the dough is not too close together as the cookie dough will spread while baking.
Bake in the oven at 170c for 11-12 minutes.
