For the last couple of days the mercury in the thermometer is getting higher and higher. Hooray to the Spring !!!!I wish I could be 5 year old again and fly a kite up and down the hill. I feel so full of energy. The sad Winter has gone, time for colorful ingredients.
Usually over the weekend i take my time when it comes to breakfast, even make some baked goodies before everyone is out of their pajamas. But not yesterday, all I wanted was my plate to scream SPRING
I was thinking of making some berry salad for breakfast but I saw a pack of couscous in my pantry and since it's easy to cook I thought it may be a great addition to the berries. Oh, and it wasn't just quick but also healthy and delicious breakfast.
Let's turn the stove on and make the couscous.
In a small sauce pan brig to boil 1 1/2 cup pulp free juice (i used pomegranate juice) and 1 stick of cinnamon
Pour it over 3/4 cup couscous
Cover and let until the liquid is absorbed, about 5-7 minutes.
When done, fluff it up with a fork.
Add 2-4 cups of your choice of berries
and enjoy
Thanks for reading, hope you'll give this quick and healthy salad a try and enjoy it as much as we did. As usual, RoxanaThank you for your vote
