INGREDIENTS
2 Cups of cooked whole wheat couscous
1/2 Cup of cooked red quinoa
1/3 Cup of kale
1 Cup of diced vegetables (tomato, zucchini, carrots, red peppers and onions)
2 chopped serrano peppers (optional)
Juice of 1 Lime (freshly squeezed)
1 tbsn Olive Oil
Combine couscous, red quinoa, kale and vegetables in a large bowl. Whisk together lime juice and olive oil. Pour over couscous and stir well. Refrigerate for 2 hours and serve chilled.
