Courgette Raisin Muffins

Ingredients:
55g Melted butter
3 Eggs
200 vegetable oil
300g Caster Sugar
2 Courgettes
285g Plain Flour
2 Tsp Baking soda
1 Tsp Baking Powder
1 Tsp Salt
1 Tsp Cinnamon
1 Tsp Nutmeg
150g Raisins

Add eggs and oil to a mixing bowl

Mix until pale and slightly thickened

Add Sugar and butter and mix

Add courgette and butter and mix

Add flour, baking powder, baking soda, cinnamon, nutmeg, salt and mix.

Add Raisins and stir

Scoop into muffin cases

Bake in the oven at 170c for 20-25 mins ( until dark brown on top)

Makes over 3 dozen muffins.
