Gluten free no flour pizza? Here is a different healthy pizza made with a courgette crust. As part of the Tesco Orchard Programme, I was sent some vouchers for Fresh Vegetables or Fruit, so I purchases some Fresh Courgettes, Closed Cup Mushrooms, Yellow Pepper, Cherry Tomatos, Rocket Leaves and some Bananas ( I've made some Banana Chocolate muffins to be posted later this week). With all these vegetables I decided to make a fully vegetable pizza, including the base!
I now love adding a little rocket over my pizza in the 'Pizza Express' style, just adds that little extra flavour somehow. All the vegetables were fresh and crisp and as a vegetarian I do love vegetables, specially flavourful and fresh vegetables.
Ingredients
2 Small Courgettes
2 Eggs
125g Mozzarella
4 Tbsp Tomato Puree
1/2 Tsp Italian Herbs
Sliced Mushrooms
Chopped Peppers
Cherry Tomatos
Jalapenos
Olives
Sweetcorn
Grated Cheddar Cheese
Rocket Leaves
Grate 2 courgettes either by hand or with a grating blade in a food processor.
Add grated mozzarella and 2 eggs to the grated courgette.
Mix well and season with salt and pepper.
On a large oiled baking tray or pizza stone spoon on the courgette mixture.
Spread over the pizza stone evenly.
Bake in the oven at 200c for about 15 minutes, then remove from the oven and allow to cool for about 2 minutes.
Add on some tomato purée mixed with a little italian herbs, and top with veggies or pizza toppings of your choice.
Sprinkle on grated cheese.
Bake in the oven for another 10-15 minutes at 200c until the cheese has melted and slightly golden brown.
