Twin Kennedy are in the holiday spirit, with the release of their debut Christmas album, A Twin Kennedy Christmas, and a general excitement for the holiday season.
Carli and Julie Kennedy, twins from Powell River, BC, are country music makers, singing and writing and playing wherever the music takes them. And in the last few years the list of places they've been has grown continuously - and it looks like it's going to keep growing in 2018 and beyond.
To help get us all in the Christmas spirit, we asked the ladies of Twin Kennedy to pair up a favourite holiday recipe with a song from their new album... and Carli is going first with the pairing of Cold Weather and Truffle Rosemary Roasted Yams!

Carli's Truffle Rosemary Roasted Yams
Prep time: 10 minutes
Bake time: 30 minutes
4 medium-sized Yams
1 tablespoon Truffle Oil
1 tablespoon Olive Oil
2 tablespoons Lemon Juice
2 sprigs of Fresh Rosemary, chopped fine or 1 tablespoon dried Rosemary
1 teaspoon Paprika
1 teaspoon Fresh Ground Pepper
1 teaspoon Sea Salt
1. Peel yams and cut into small triangles approximately 1/4″ thick.
2. Cover a large baking pan with parchment paper. Toss yams with truffle oil, olive oil and lemon juice. Sprinkle paprika, rosemary, pepper and salt evenly on top.
3. Bake in oven for 30 minutes at 400°F or until lightly browned. Serves 4.
