Coffee Nut Muffins!

Coffee Walnut Chocolate Crumble Muffins! Was my original title and changed to Coffee Nut Muffins – As you can see I’m not very creative when it comes to names.

Ingredients:
250g Plain Flour
75g Caster Sugar
75g Dark Brown Sugar
2 Tsp Instant Coffee
2 Tsp Baking Powder
1/4 Tsp Salt
1 Egg
225ml Milk
110ml Oil
1 Tsp Vanilla
30-40g Walnut pieces
40g Milk Chocolate pieces
Tbsp Melted chocolate

This is an all in 1 recipe – which makes it easy. In a mixer bowl add the plain flour, caster sugar, dark brown sugar, instant coffee, baking powder, salt, egg, milk, oil and vanilla.

Mix a few minutes until all combined.

Place the chocolate and walnut pieces in a bowl along with the crumble mix.

Evenly distribute the batter into 12 muffin cases or 14 slightly smaller muffins. Add on top the walnut pieces and chocolate pieces evenly.

Sprinkle on the crumble mix.

Bake in the oven for 20-25mins and allow to cool slightly.

Drizzle on some melted chocolate
