Coconut Milk Biriyani is a simple one pot meal where rice is cooked in coconut milk with some spices. I make this often and a simple raita or dhall curry will do. I personally love the combo of Coconut milk biriyani with Chilly Gobi.
Ingredients: Basmati Rice- 1 cup (Soak for 10 minutes in water) Bay Leaf- 1 Cinnamon- 2 (1 inch stick) Cardamom- 2 Clove- 1 Ghee- 2 tbsp Oil-2 tbsp Green Chilly-1 Ginger Garlic Paste- 1 tbsp Coconut milk - 2 cups Salt- as per taste Method: Coconut Milk Biriyani Wash and soak basmati rice for 10 minutes.
Heat a pressure cooker with oil and ghee.
Fry bay leaf, cinnamon, cardamom and clove.
Add green chillies and ginger garlic paste.
Fry well till the raw smell leaves.
Add coconut milk and add salt now.
Coconut Milk Biriyani Add soaked basmati rice and pressure cook for 1 whistle. Let the pressure come down, give a gentle stir and trasfer to serving bowl. Serve hot with Raita or dhall Curry or Chicken Curry. Enjoy... Coconut Milk Biriyani
