Coco-Choco Protein Buckwheat Bites

Coco-Choco Protein Buckwheat Bites

Ingredients

  • 5 Organic dates
  • 100g Organic walnuts
  • 50g Raw buckwheat
  • 1 Scoop of Yuve vegan protein powder
  • 2 tbsp. vegan honey
  • 2 tbsp. coconut oil
  • 200g fresh coconut chunks

Instructions

  1. Soak dates in hot water for about 10min.
  2. In the meantime cook buckwheat by placing raw buckwheat grains and 8oz water in a saucepan for about 15min on a medium heat. Then drain water out and set cooked buckwheat aside.
  3. Place dates into a food processor and run until they are thoroughly chopped.
  4. Add walnuts, Yuve protein powder, buckwheat, and 1 tbsp. of coconut oil into a food processor and run until you get a smooth paste.
  5. Shape this paste on the flat surface and put it into fridge for 10min to harden.
  6. In the meantime, make a white layer by blending fresh coconut chunks with ½ tbsp. of coconut oil and 1tbsp.vegan honey
  7. Take out the 1st layer from the fridge and add the white layer on top. Put it back to fridge to harden for 10min.
  8. Take out the cake and cut it into square pieces (optional).
  9. Garnish squares with organic crushed walnuts.
