Cinnamon Sugar Cookies That Are Made from an Easy 1-2-3 Cookies Recipe

&version;Have you heard of the 1-2-3 cookies recipe?
1-2-3 means that the cookies are made of 1 part butter, 2 parts sugar, 3 parts self raising flour plus 1 egg for every 100g of butter used. Sounds so straightforward and easy, huh?
There is another egg-free version of the 1-2-3 cookies recipe at here and here and the cookies are made with 1 part sugar, 2 parts butter, 3 parts self raising flour with NO eggs. 
So straightforward and easy too!!!

It is true that baking these 1-2-3 cookies is as easy as 1-2-3. With this high proportion of self raising flour added, this basic cookie dough is in fact very easy to handle and can amazingly produce cookies that are delicious with nice chewy texture.

Which 1-2-3 cookies recipe did I use and why?

Based on the recommendation by Ed Halmagyi, a Channel 7 TV chef presenter via an old Better Home and Garden Magazine, I have choose to use the recipe using 1 part butter, 2 parts sugar, 3 parts self raising flour and this recipe has worked perfectly well for me.
I might try the egg-free version of 1-2-3 cookies recipe using 1 part sugar, 2 parts butter, 3 parts self raising flour in the future but not now because I have been busy baking many 1-2-3 cinnamon sugar cookies as Christmas gifts.

Using a 1-2-3 cookies recipe, I have easily baked 54 cinnamon sugar cookies!

These cookies are slightly crunchy with their coarse sugar coating and delicious with their chewy cakey inside.
I'm impressed!!! This basic recipe with minimal added butter can actually produce such yummy cookies.


I must say... these basic 1-2-3 cookies made with minimal added butter are really good everyday cookies. At the same time, they are like an empty canvas for me or you to express our creativity! And so, my son and I had transformed ours into these Christmas cookies!!!

When the cookies are cooled, my son and I decorated the cookies with royal icing and Christmas sprinkles.

After giving these cookies to his friends, my son told me that he is happy that his friends like these cookies and I'm happy for him too.

Makes about 55 medium cookies - This is the amount that I have used in my video.

Note: You can use half of the recipe to make about 25-27 cookies.

For the cinnamon sugar coating:

100g (1/2 cup) demerara or coarse white sugar
2 tbsp ground cinnamon

For the cookies:

200g unsalted butter, softened at room temperature
400g (2 cups) caster sugar
2 tsp vanilla extract
2 large eggs, at room temperature, roughly beaten 
600g (4 cups) self raising flour

Preheat oven at 180°C / 350°F. Line baking trays with baking paper.

For the cinnamon sugar coating:

Mix sugar and ground cinnamon until evenly incorporated. Set aside.

For the cookies:

Use a wooden spoon or an electric mixer with paddle attachment to beat butter and caster sugar until fluffy and combined. Add vanilla and beat to combine. Add eggs bit by bit and beat well after each addition. Sift self raising flour into the butter mixture and use a wooden spoon or spatula to mix until just combined.

Scoop or roll tablespoonfuls of dough into balls and roll them in the cinnamon sugar to coat. If the cookie dough is a little dry and not sticky enough to stick the sugar, you can press the dough lightly onto the sugar to ensure that they are well coated with the sugar.

Arrange the sugar-coated cookie dough on the prepared tray with about 5 cm / 2 inches apart and use a metal spoon to press them flat slightly.

Bake for 12 mins or until golden and crispy. Allow cookies to cool slightly for about 10 mins on the baking tray. Then, transfer them onto a wire rack to cool completely. 

Decorate with plain white royal icing and sprinkles if desired. Enjoy!

Store cookies in an airtight container at room temperature for up to 1 week.
