Chunky Monkey Muffins

Ingredients:
300g Plain Flour
200g Caster Sugar
1 Tsp Baking Powder
1/2 Tsp Baking Soda
Pinch of Salt
1 Egg
100ml Milk
1 TSp Vanilla
200g Melted Butter
200g Cup Oats
Banana
200g Milk Chocolate
Twix Balls/Smarties

In a large bowl add the dry ingredients flour, sugar, salt, baking powder, baking soda and mix together.

In a separate bowl add the egg and milk and mix together.

Stir in the melted butter and vanilla into the milk & egg mixture and briefly mix together.

Add the wet ingredients to the dry

Stir the wet with dry until all combined and mixed well.

Chop a banana into small chunks to give the banana texture within the muffin.

Stir in the chopped banana trying not to mash the chunks.

Add oats to the batter and stir.

Add chocolate chunks to the batter.

Scoop into muffin cases using an ice cream scoop.

Add a few Twix balls or Smarties or both to the top of the muffins.

Bake in the oven for 22-28mins at 170c.

Allow to cool and enjoy!!
