If you are on Instagram and follow my Insta-Stories then you know that I have been cooking and baking up a storm. I won't lie, it has been a lot of fun and I can't seem to stop.

So coming to today's post, I had baked these brownies last month and a lot of people asked for the recipe. I suck at recipes and even though baking is a science, I often just wing it - I mean baking brownies is no rocket science. In fact it is one of the easiest things to bake. While I do follow some what the same measurements but my no two batches come out the same. So this time around because I have too much time on hand, I decided to write down my ingredients and their measurements and tried to recreate the recipe again this week. Surprisingly, they turned out the same, if not better.

I had promised a few people over at Instagram that if I am able to miraculously recreate the recipe I will definitely share it on the blog. Hence, here I am because if anything I always keep my promises.

Hot tip: If you like the flavor of coconut, then you can use coconut oil instead of butter in this recipe. My reason was using it was purely to exhaust my pantry but the end result was quite delicious.

Ingredients

1 cup unsalted butter, 2 sticks
1 ½ cups dark chocolate chips
1 ½ cups granulated sugar (coconut sugar, date sugar, jaggery)
¾ cup brown sugar
1 tablespoon vanilla extract
1 teaspoon salt
3 large eggs
1 ¼ cups all-purpose flour
⅓ cup dark cocoa powder
nonstick cooking spray, for greasing

Instructions

- Preheat the oven to 350˚F (180˚C).
- Add the coconut oil (or butter) and 1 cup of chocolate chips to a large microwave-safe bowl. Microwave for one and half minutes, then let sit for 3 minutes before whisking together.
- Add the granulated and brown sugars, vanilla, and salt. Whisk to combine.
- Whisk in the eggs until fully combined.
- Sift the flour and cocoa powder into the bowl and fold in with a spatula. Add the remaining chocolate chips and fold to incorporate.
- Line a 9-inch (23-cm) square baking pan with parchment paper and grease with nonstick spray. Spread the batter evenly in the pan.
- Bake for 40 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached.

- Let cool completely before cutting.
- Enjoy!
