Fruit cakes are a traditional part of any Christmas menu. Delicious, simple and easy to make, they can also be made a couple of days in advance.
Ingredients:
Brown Sugar - 1 cup
Maida - 1 1/2 cup
Eggs - 2
Cinnamon Powder - 2 tsp
Clove Powder - 1 tblsp
Allspice Powder - 1 tblsp
Nutmeg Powde - 1 tblsp
Baking Soda - 1/2 tblsp
Brandy - 1/4 cup ( + 3/4 cup if required)
Lemon Zest - 1 tblsp
Vanilla Extract - 1 tblsp
Raisins - 3/4 cup
Mixed Nuts - 3/4 cup (almonds, pistachios, cashews), chopped
Mixed Fruit - 3/4 cup, dried
Butter - 3/4 cup, melted
Method:
1. Combine sugar, maida, baking soda, eggs, lemon zest, vanilla extract, 1/8 cup brandy, mixed fruits, nuts and melted butter.
2. Add the cinnamon powder, clove powder, nutmeg powder and mix well.
3. Transfer to a greased flat pan.
4. Place it in a preheated oven at 110C/225F for 30 to 45 minutes or until ready.
5. Remove and cool.
6. Wrap the cake in a foil and sprinkle 1 tblsp of brandy everyday for a week to keep it moist and soft.
7. Cut into slices and serve.
