Here comes my traditional Christmas cooker cake recipe – tried and tasted at home
December; aah I love this time of the year. It is my baby’s birthday month and yay its Christmas too. This is a beautiful season when almost the entire world gorges on delicious goodies and a variety of delicacies. It’s the time when highest numbers of cakes are baked too
When Sangeetha asked me to share an out of the box healthy cake recipe this Christmas season, I was elated. There are a lot of healthy versions to baking a cake. But then thanks to my thoughtfulness and inquisitiveness, I did manage to come out successfully with my own sugar-free yet a yummy -licious, healthy-licious version of the sinful treat.
This is a very simple method I followed, used the basic things which are readily available at homes and it sailed out beautifully through giving me the super joys of good results. Now we parents need not worry when our children hog on cakes baked with goodness of health benefits.
Ingredients of Christmas Cooker Recipe and its benefits:
Wheat flour: This is a wholesome food full of vitamin B1, B2, B3, E, calcium, phosphorus, folic acid, zinc and iron. It helps in balancing mineral deficiency, gallstones, anemia improves metabolism, prevents childhood asthma, reduces the risk of heart attacks etc.
Dates: They are rich in Vitamin B1, B2, B3 & B5, Vitamin A1 & C, potassium and has high iron content. It improves digestion, is an energy booster, helps in improving eye-sight and regulates healthy nervous system.
Honey: This wonder liquid is natural source of carbohydrates which provides strength and energy to the body. It builds up the immune system and has antioxidant properties. It also has anti-bacterial traits which help in the healing of cuts and burns.
Eggs: They contain a good amount of proteins, vitamins, calcium, iodine, iron, phosphorus and Zinc. They aid in maintaining skin, immune system, red blood cells, vision, bones and teeth.
Curd: It is very good for digestion, immune system, strengthens bones and teeth because of its high calcium content. Curd also minimizes the risk of blood pressure and heart problems. Those who are lactose intolerant and cannot consume milk can always resort to curd. It has high zinc, vitamin E and phosphorus content which make it a great skin care product.

My healthier version of Christmas Cooker Cake Recipe – Preparation:
Preheat cooker with sand at the bottom for 10 minutes.
Mix all the ingredients together in a large bowl. You can also use a blender to get the dripping consistency. Add milk if it is too dry but please be careful that you don’t whip into a watery batter.
Grease the bottom of the baking dish with oil and dust with a little cocoa powder / wheat flour.

Pour the batter evenly, place the dish carefully on the sand and keep a low flame for about 40 minutes. Insert a knife, if it comes out clean, your cake is ready.
Allow the cake to cool down, cut and serve.

- Seedless Dates or Date syrup - 250 gms finely chopped/ grated in the mixer grinder
- Honey - 250 gms
- Eggs - 2
- Curd (for eggless cakes) - 1 Cup
- Cocoa Powder- 10 gms
- Vanilla essence - 1 small spoon
- Baking powder - 1 teaspoon
- Grated orange peel
- Soda Bicarbonate (Meetha Soda) – a pinch
- Unsalted butter - 250 gms
- Milk – as required to get the dripping consistency
- Almonds, raisins, tutti-futti and walnuts – a handful
- Preheat the cooker with sand at the bottom for about 5-10 minutes.
- Mix all the ingredients in a large bowl.
- Grease the baking dish with butter/oil and dust with cocoa powder or wheat flour.
- Pour the batter and keep the baking dish on the sand with low flame for 40 minutes
- Insert a knife into the cake and if it comes clean, cake is well cooked.
- Cut and serve once cooled well.
