Ingredients for 16-18 Cookies:
1 cup coconut fillings for cakes½ cup wholemeal flour 1/3 cup brown sugar, 1 teaspoon ground cardamom¼ tsp sea salt 6 tablespoons gheePour the coconut fillings in a dry pan over medium heat and fry them gently while continuously stirring. Leave to cool. Mix the flour, sugar, cardamom and salt. Slowly add the oil, and mix with your fingers until you have a soft, moist dough. You may need to add another tablespoon of ghee until you get a good consistency. Wrap the dough in a damp towel and let it rest in the fridge for 15 minutes. Preheat oven to 180 ° C.
