Delicious Apricot Bars

Feel the spirit of celebrating New Year with your loved ones, trying out this easy delicious recipe.
1 cup butter, chilled and cut into small pieces
2 1/4 cups all purpose flour
1 cup granulated sugar, divided
2 teaspoons lemon juice
3 eggs, separated, whites reserved
1 12 to 16-ounce jar apricot preserves
1 cup chopped nuts
Preheat oven to 350 F. In a large bowl, using a pastry blender, cut butter into flour until mixture resembles crumbs. Add 1/2 cup sugar, lemon juice, and egg yolks, and blend well. Press firmly into greased 9 x 13-inch pan. Spread preserves on top of dough. Beat egg whites until frothy. Add remaining 1/2 cup sugar, a bit at a time, beating until stiff, but not dry. Fold in nuts. Spread on top of preserves and bake 40 minutes. Cool 10 minutes and cut into bars. Makes about 3 dozen bars.
