Ingredients:
3 Egg whites
Pinch of Cream of tartar
100g Caster Sugar
20g Cocoa Powder
60g Chocolate chopped
150mls Double Cream
30g Icing sugar
15g Cocoa Powder
Fresh Strawberries
White Chocolate ( 3 small chuncks)
Add 3 egg whites into a mixer
Mix at medium spead speed until they start to become white and fluffy and cream of tartar and caster sugar
Contiue to mix and add cocoa powder
Once light and fluffy and soft peaks, remove from the mixer
Add chopped chocolate and fold in
Spread on to a baking tray lined with baking paper in a mound
Bake in the oven at 140c for about an 1h 15mins
Remove from the baking paper while still warm onto a plate
Into a mixing bowl add the double cream, 15g Cocoa powder and icing sugar
Mix on medium speed until thicken up
Spread the Chocolate cream over the Chocolate Pavlova
Chopped up fresh strawberries and sprinkle over the chocolate cream
Using a micro grater, grate on some white chocolate over the Chocolate Pavlova ( about 3 small squares).
Slice into 8 pieces and enjoy!
