Chocolate Glaze Baked Doughnuts
St. Patrick’s Day is this coming Saturday and beside my favorite color being green and one of my CLOSEST friends Birthday, it’s just another day for me. But for those two reasons I always celebrate it. Wearing green is a must on that day, anyone that knows me personally, knows that I will pinch you if you do not wear green that day. J
Also this year my good friend Erica is celebrating her 30th Birthday!!!! YAY!
These doughnuts have nothing to do with that. I have wanted to make doughnuts for a while now. I finally purchased a doughnut pan, so I baked these for breakfast this past weekend. My girls wanted to add sprinkles; I decided to add green sprinkles just for the sake of St. Patrick Day.
The doughnuts were good, just a little on the thick side. I plan to try other recipes, but this one was good. J
Baked DoughnutsIngredients1 cup unbleached all purpose flour½ cup sugar1 teaspoon baking powder1/8 teaspoon nutmeg¼ teaspoon salt1 teaspoon cinnamon3 tablespoons dried buttermilk powder2 large eggs3 tablespoons canola oil2 tablespoons waterPreheat oven to 375 degrees F.
Directions Spray a doughnut pan with baking spray (Pam)In a large sift the flour, sugar, baking powder, nutmeg, salt, cinnamon, and buttermilk powder together; set aside. In a small bowl combine the eggs, canola oil, water until foamy. Pour the mixture into the dry ingredients and stir just until combined. Pour the batter into the doughnut pan until each is half full. Bake for 10 to 12 minutes.Remove doughnuts from the pan and allow cooling on a cooling rack, while you make the glaze.
Chocolate GlazeIngredients1 stick (1/2 cup) unsalted butter¼ cup milk1 tablespoon light corn syrup2 teaspoons vanilla extract1 cup bittersweet chocolate chips2 cups confectioners’ sugar
DirectionsIn a saucepan, combine the butter, milk, corn syrup, and vanilla. Heat over medium heat until the butter is melted. Turn the heat down to low and add in the chocolate chips. Whisk the chips into the mixture until they are melted. Remove the pan from the heat. Sift the sugar into the pan and whisk until the mixture is smooth.  Dip the doughnuts immediately and allow the glaze to set. *Recipe says to set for 30 minutes but my girls didn’t wait but maybe 10 minutes. I actually enjoyed the glaze a day later.*
Recipes adapted (with few minor changes) from: Doughnuts- King Arthur (makes 6 doughnuts) and Chocolate Glaze- Alton Brown (makes enough for 20-25 doughnuts).
