Chocolate Chip Biscotti Recipe

Using a food processor would be the easiest option, however, you can use a pastry blender to make this Chocolate Chip Biscotti Recipe with equal success–it just takes a bit more work to mix up the butter! You may want to dig in and use your hands a bit, too. I found it on Food.com.

The original recipe didn't call for two separate five minute baking times, but I do believe it is necessary!
Ingredients
- 1 3/4 Cups Flour
- 1 Cup Sugar
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 4 Tablespoons Cold Butter
- 1 teaspoon Vanilla Extract
- 1 Cup Chocolate Chips
- 2 Eggs
Instructions
- Preheat oven to 350*.
- Combine Flour, Sugar, Baking Powder, and Salt.
- Using a pastry cutter or a food processor, cut in Cold Butter and Vanilla Extract.
- Add Chocolate Chips and Eggs and mix to combine.
- Form into two logs on a parchment paper covered-cookie sheet. Press hard!
- Bake 350* for 25 minutes.
- Cool completely.
- Slice into 1" diagonals. Bake 5 minutes more on each side. Store in covered plastic container.
