Cherry and Chocolate is probably my hubs favorite combination, so I thought I might actually make a great cake combination.
For my husbands birthday, I let the kids decorate the cake. I Covered the cake in chocolate butter cream frosting but then let the kids loose with the fondant icing!
The cake with moist and soft, with pieces of cherry within the cake! Adding the cherry jam to cake, gave it a subtle hint of cherry too.
Ingredients
6oz margarine
6oz caster sugar
6oz self-raising flour
1 tsp baking powder
1 tsp vanilla
1oz cocoa powder
3oz cherry jam
2oz milk
3oz glacé cherries
To a mixing bowl add all the ingredients except the glace cherries and mix on medium-high speed for 2 minutes.
Add glace cherries cut into halves and stir.
Spoon the mixture evenly between 2 cake tins and bake in the oven at 170c for 25-30 minutes.
Once the cake has cooled, spread over some extra cherry jam in the middle.
Then add a layer of chocolate buttercream frosting in-between. You can cover the cake all over with buttercream if desired or can leave just simple also.
