Ingredients:
Chicken - 250 gms, boneless, skinless, sliced
Mixed Vegetables - 400 gms
Basmati Rice - 1/2 cup, cooked
Peanut Oil - 1/2 tblsp
Oyster Sauce - 1 to 2 tblsp
Sweet Chilli Sauce - 2 tblsp
Cashew Nuts - 2 tblsp, unsalted, toasted
Method:
1. Heat a pan of water to a boil.
2. Add the mixed vegetables and cook for a minute.
3. Drain well and keep aside.
4. Heat oil in a pan over high flame.
5. Add the chicken pieces and stir-fry for 2 minutes or until cooked.
6. Add the mixed vegetables, oyster sauce, sweet chilli sauce and cook for 2 minutes.
7. Add the cashew nuts and mix well.
8. Serve with cooked rice.
