Chicken and Broccoli Casserole Recipe
With time running out, I needed to find something that the sitter could handle and this Chicken and Broccoli Casserole recipe was it!
Not only was it easy for me to prepare ahead of time and pop in the oven, but everyone absolutely loved this chicken recipe.
I didn’t have quite enough broccoli so I threw in slightly less than a half bag of frozen carrots. I also cooked a small, minced onion with the chicken.
Feel free to tweak it to suit your tastes. I think it makes a great base with which to play! From The Complete Guide to Country Cooking, by Taste of Home books.
Chicken and Broccoli Casserole Recipe

From The Complete Guide to Country Cooking, by Taste of Home books. It is one of my all-time favorite cookbooks! I use it for so very, very much! Find it at a mom and pop Indiana bookstore near you.
I used a combination of fresh broccoli and frozen carrots that I cooked with the broccoli. I also used a small onion that I cooked with the chicken.
Ingredients
- 3 Cups Broccoli Florets (about 1 1/4 lbs)
- 2 Cups Chicken, Cubed and Cooked
- 1 Can Condensed Cream of Chicken Soup, Undiluted
- 1/2 Cup Mayonnaise or Salad Dressing (I used Mayo)
- 1/2 Cup Grated Parmesan Cheese
- 1/2 Teaspoon Curry Powder (I omitted)
- 1 Cup Soft Bread Crumbs
- 2 Tablespoons Butter or Margarine, Melted
Instructions
- Cook Broccoli in saucepan until crisp-tender. Drain.
- Place in greased 11 x 7 baking dish. Set aside.
- Combine Chicken Soup, Mayo, Cheese, and Curry Powder (if using). Pour over Broccoli.
- Top with Bread Cubes and Butter.
- Bake, uncovered, at 350° for 25-30 minutes or until heated through.
