Chi Coconut { Porridge }

Chi Coconut porridge recipeI am horrifically sorry for the long radio silence … I have been a terrible blogger so far this year. It definitely has been one thing after another health wise and then getting used to an entirely new regime, plus my birthday was last week and I have temporarily moved down to London for a few weeks too on top of all of this! 2015 is certainly moving at a much quicker rate than 2014, that’s for sure, thank goodness! Now before we launch into my birthday and some snaps from my brief stint in London – town so far, I would like to share with you a few recipes (coming one at a time) from my beloved “coconut” and from the good people at Chi Coconut!! My parents certainly know at home just how much coconut water I can consume in one evening (it’s so divine and heavenly to drink) so I was exceptionally happy when a nice little parcel of Chi goodies came knocking at the door one morning. Having never tasted their coconut milk before I was excited to try; it’s deliciously creamy and works beautifully with buckwheat groats (soaked overnight à la Hemsley & Hemsley).
