Chetinad Kozhi Milaga Varuval
A rich and tasty roasted chicken with blended flavor of cumin, red chilly, turmeric.Ingredients: Chicken- 500 g Sesame oil- 100 ml Bay Leaf- 1 Cinnamon- 1 inch stick Fennel- 1 tsp Red Chilly- 6 + 10 Ginger garlic paste- 1 tbsp Turmeric- 1 tsp + 1 tsp Salt as per taste Curry Leaves- few
Method:
Heat oil in a pressure pan, add turmeric, curry leaves, cinnamon, bay leaf, fennel. Fry for a minute and add chopped onion. Add salt and saute till onion turns golden brown. Add red chilly, ginger garlic paste and fry well till the raw smell leaves.
Grind red chilly, turmeric, cumin to a fine powder.
Add this powder and saute well.
Add chicken and stir to coat the masala evenly.
Pressure cook for 3 whistles.
Once pressure comes down, open cook to thicken the chicken and to roast the chicken a little.
Remove from pan and serve hot with rice and simple sardine fish curry.
