Semifreddo is italian for half cold, and this is an amazing easy dessert that goes well with a lovely pasta, and an ice cream maker is not needed. It's a magical little dessert you can make on the day and not have to worry about until serving - takes about 10 minutes to put it together and then the freezer does the rest for 4 hours!
Semifreddo is an italian class of semi-frozen desserts made with whipped cream, sugar and eggs & yolks, you can make a semifreddo your way by adding you fruits or sauces of choice. My husband loves cherries and white chocolate, so I thought I would make it specially from him, and he loved it.
Ingredients
150ml Double Cream
1 Egg & 2 Yolks
Handful frozen Cherries
100g Chocolate
100g Sugar
Pour the double cream into a mixing bowl.
Whipped until nice and thick, like thick whipped cream. If you only have 1 mixing bowl (like me), then spoon the cream into a separate bowl.
Add eggs, yolk and sugar to the mixing bowl.
Mix on medium to high-speed until pale and airy.
Melt the 75g white chocolate in a bowl, I use the microwave method, heating for 20 seconds at a time until melted.
Add the whipped cream and melted chocolate to the mixture.
Mix on medium to high-speed until light and fluffy.
Chop the white chocolate
Chop the frozen cherries
Add the white chocolate and cherries to the cream egg mixture and stir well.
Line a loaf tin with cling film and pour in the mixture, cover the top with more cling film and place in the freezer for about 4-5 hours.
When ready to serve, remove from the freezer about 10 minutes before serving and place into the fridge.
Remove the cling film and place onto a plate.
Slice the semifreddo and serve immediately.
